Chicken and Tomato Summer Salad

# Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) # Mozzarella Cheese, part skim milk, 2 oz # Chicken Breast, no skin, 3 ounces# Olive Oil, 2 tbsp # Tarragon, ground, 2 tsp # Salt, 1 dash # Pepper, black, 1 dash
This makes two servings, but it is easy to scale up or down. You can also change the herbs you use, but I like tarragon with the chicken.
The lack of cooking time assumes that you are using leftover chicken from a roast, or other chicken meal. Otherwise, you could use canned chicken.
Slice the tomatoes thinly, and spread them in the bottom of a flat dish. sprinkle the shredded mozzarella and shredded chicken over the tomatoes. Drizzle the olive oil evenly and then add the tarragon, salt, and pepper to taste.
It makes a great light lunch, or have a half portion as an appetizer to a larger meal.
