Ingredients
1 cup whole white wheat flour1/2 tbsp baking powder1/2 tbsp cinnamon1 1/4 cups vanilla soy milk1/2 tbsp vegetable oil1/2 tsp vanilla1/2 ripe banana, mashed
Directions
Mix flour, baking powder and cinnamon together in a large bowl. In a separate bowl, mix soy milk, vegetable oil and vanilla and whip with a fork for 1 minute. Pour this mixture into the flour mixture and add banana. Stir to combine, don't worry about lumps.

Preheat a medium skillet. Using a large serving spoon or ladle, drop a spoonful of batter into the skillet. Cook until the pancake begins to bubble, about 2-3 minutes. Turn with a spatula and cook until the underside is lightly browned.

This recipe makes about 7 three inch pancakes with medium thickness. If you like thinner or thicker pancakes, feel free to add more or less soy milk. Also, I used Haitian vanilla, which is stronger than store bought vanilla, so you may need to add a full teaspoon.

The nutritional information in this recipe was calculated with Private Selection (Kroger brand) Organic Light Vanilla Soymilk and Smart Balance Omega oil.

The cooking time is based on cooking one pancake at a time.
