Banana Nut Muffins

Ingredients
1 C Whole Wheat Flour2/3 C White All Purpose Flour1/2 tsp Salt1/4 tsp Cinnamon1 tsp Baking Soda1 C plus 2 TBSP Sugar2 Eggs1/4 C Canola Oil2 TBSP Greek Yogurt1 tsp Vanilla Extract4 Ripe Bananas, mashed
Directions
1. Preheat oven to 350
2. Sift Flours with Salt, Cinnamon and Baking Soda
3. Beat the Eggs with the Sugar until foamy, stream in the Canola Oil and then add Yogurt and Vanilla Extract
4. Fold Bananas into Sugar and Eggs mixture
5. Fold dry ingredients into mixture and stir until mixed fully
6. Pour 1/3 cup of batter into greased molds of a 12 muffin pan
7. Bake for 40 minutes or until golden brown and a toothpick can be pulled out cleanly
