Pumpkin Almond &Coconut Milk

Ingredients
5 lbs Fresh pumpkin1/2 c Almonds1/2 lb Firm Tofu2 med carttos2 stalks of celery1 can coconut milk3 Tlbs olive oil2 t Tumeric2 t salt1 t Ginger2 t cummin2 tCoriander
Directions
Saute veggies in oil until they start to soften. Add Coconut milk, spices and simmer until soft. (about 20 min). Can serve over a grain or eat plain.
