Cottage Pineapple Bread Pudding

Ingredients
1 loaf Aunt Millies 5 grain Fiber for Life Bread (17 slices, cubed)1 Cup Skim Milk1 Cup Fat Free Half & Half1 Cup Fat Free Cottage Cheese1 1/2 Cups Egg Substitute1/2 Cup Maple Syrup2 tsp. Vanilla2 tsp. Cinnamon1 tsp. Ginger1 tsp. Nutmeg1 Lemon, zested2 Cans Crushed Pineapple
Directions
Wisk together all ingredients except Cottage Cheese, Pineapple & Bread. Add Cottage Cheese & Pineapple (including juice) and mix well. Add bread cubes and soak for 2 hours in frig (stir occasionally). Bake at 350 degrees for 90 minutes.
