Greek Cauliflower Potato Salad

4 potatoes, cubed and boiled1 head cauliflower, steamed whole1 Eggland's Best Egg, hard boiled1/4 cup Greek fat free plain yogurt1/4 cup mayonnaise 1/2 tsp Coleman's dry mustard1 large stalk celery1/4 cup diced onion or green onions1/4 cup shredded carrots6 sliced or diced green olivessalt, pepper, parsley and paprika to garnish
While cooked ingredients are cooling, assemble remaining ingredients in a bowl and mix well. Then add cooled items and garnish.
The trick to loving this recipe is to make it exactly like you would normally make your potato salad. Just decrease the eggs and mayo you would normally use.
I love the Greek yogurt, it has a completely different taste and consistency than regular yogurt. I use it to substitute half of the mayo or sour cream and I can't tell the difference.
