Ingredients:Baked Potato (baked potatoes), 300 grams (remove)*Celeriac (raw weight), 250 gram(s) (remove)Milk, 2%, 200 mL (remove)Onions, raw, 1 small (remove)Garlic, 1 clove (remove)Water, tap, 500 mL (remove)*chicken stock cube each, 1 serving (remove)Olive Oil, 1 tbsp (remove)
Peel and chop everything. Fry onions and garlic in oil until soft then add celeriac and potatoes. cook for about 5 min then add milk and stock cube plus enough water to generously cover everything. Cover and simmer for 30 min. Blend until smooth, adding water if necessary to achieve desired consistency. Add black pepper and nutmeg to taste.
Serves 4 for a hearty starter or 2 as a generous main. (makes about 1L thick soup...more if thinner).
I love it cold straight from the fridge as well as warm!
