Garlic Vegetable Soup

Ingredients
2 tbsp olive oil3/4 c. chopped onion2 medium carrots, chopped2 medium stalks celery, chopped1/4 medium head cabbage, chopped6 c. low sodium chicken broth2 (14.5 oz) cans diced tomatoes3 1/2 c. water3 cloves garlic, pressed1/2 tsp freshly ground black pepper
Directions
Heat the oil in a large saucepan with a tight-fitting lid over medium heat; satue onion, carrots, celery and cabbage for about 5 minutes, stirring well. Raise heat to high and add broth, tomatoes and water. Bring to a boil, reduce heat, cover and simmer gently for 1 hour. Remove from heat and add garlic and freshly ground black pepper.
