Turkey Stuffed Peppers

Ingredients
2 large sweet peppers (I use one red, one yellow)3/4 lb ground turkey - white meat1/3 cup chopped onion1/2 can diced tomatoes1/c cup cherry tomatoes, halved1/2 cup water1/3 cup long grain brown rice (uncooked)1 tbsp worcestershire sauce1/2 tsp dried basil or oregano1/2 cup shredded reduced fat chedder cheesesalt & pepper to taste
Directions
Preheat oven to 375*.
Cut the tops off peppers and remove seeds. Save the tops and coarsely chop them.
Immerse peppers in boiling water for 3 minutes and invert on a paper towel to drain.
Meanwhile in a large skillet, cook onion, pepper tops, and turkey until browned. Drain off any excess fat.
Stir in tomatoes, water, rice, Worcestershire sauce, basil, salt and pepper.
Bring to a boil, then reduce heat and cover. Simmer 15 minutes or until rice is tender.
Stir in 1/4 cup cheese.
Fill peppers with turkey mixture and place in baking dish. Arrange extra turkey mixture around peppers.
Bake 15 minutes.
Sprinkle with remaining 1/4 cup of cheese and let stand until cheese is melted.

    Everytime I make this I always feel completely satisfied. Today I didn't boil the peppers, covered with foiled and baked for 40 minutes. The longer baking allowed for juices to really come through. - 5/31/12

    It's in the toaster oven right now, finishing up - I tasted the mixture, though and it's YUM - substituted quick cooking brown rice from Trader Joe's and it worked out great. Also used soy sauce instead of Worcestershire and it doesn't seem to have messed anything up. Thanks!! - 3/13/12

    This is a good recipe but you do need to cook rice prior to adding it to the recipe. Another alternative is to add the ingredients (without the cheese) in the cabbage leaves and simmer it in the pot with the tomato sauce. - 6/3/09

    Ya know, I've never had stuffed peppers because I hate green peppers -- hadn't thought about using red, yellow, or orange (which I love). Duh! I'll have to try this. - 4/9/09

    You could substitute the 10-minute brown rice to ensure that it would be fully cooked. I've also made stuffed peppers in the crockpot & used uncooked instant brown rice. It came out great. - 4/9/09

    I loved this recipe. I cooked the brown rice separately and didn't add the water. I used low sodium tomato sauce instead of the can tomatos. This recipe will be made again - 1/23/08

    I did not like this at all. It took nearly 45 minutes for my rice to cook and the turkey mixture was beginning to burn on the bottom of the pan. I managed to eat 1 serving but it wasn't easy. My husband enjoyed it but I will not be making this ever again. - 11/12/07
