Turkey Stuffed Peppers

2 large sweet peppers (I use one red, one yellow)3/4 lb ground turkey - white meat1/3 cup chopped onion1/2 can diced tomatoes1/c cup cherry tomatoes, halved1/2 cup water1/3 cup long grain brown rice (uncooked)1 tbsp worcestershire sauce1/2 tsp dried basil or oregano1/2 cup shredded reduced fat chedder cheesesalt & pepper to taste
Preheat oven to 375*.
Cut the tops off peppers and remove seeds. Save the tops and coarsely chop them.
Immerse peppers in boiling water for 3 minutes and invert on a paper towel to drain.
Meanwhile in a large skillet, cook onion, pepper tops, and turkey until browned. Drain off any excess fat.
Stir in tomatoes, water, rice, Worcestershire sauce, basil, salt and pepper.
Bring to a boil, then reduce heat and cover. Simmer 15 minutes or until rice is tender.
Stir in 1/4 cup cheese.
Fill peppers with turkey mixture and place in baking dish. Arrange extra turkey mixture around peppers.
Bake 15 minutes.
Sprinkle with remaining 1/4 cup of cheese and let stand until cheese is melted.

I made this for dinner tonight and it was so good! But I changed it up a little to fit my liking. I did not use all the tomatoes suggested I just 3/4 cup tomato sauce (60 cal), no worcestershire sauce, did not boil peppers, and I mixed in some Parmesan and topped with pepperjack... - 1/16/12
