Crock Pot Beef Fajitas

Ingredients
* Rub a 3-4 lb. roast with chili powder (both sides) * 1 chopped onion * 2 cups uncooked red beans * 2 cans Rotel * 1 can Cream of Mushroom Soup * l can chopped green chilies * 1/2 tsp. oregano * 2 tsp. salt * 1 cup water
Directions
Place all ingredients in order in the bottom of a crock pot.

Cook on medium to high for approximately 8 hours or until beans

are cooked. DO NOT STIR while cooking. Eat with tortillas,

cheese, sour cream, guacamole, etc.

    I skipped the uncooked red beans & added a can of black beans. Also cut up 3 bell peppers and added those as well. (no mushroom soup at all) -- When shredded, it makes a great base to either top a green salad, or stuff burrito shells + shredded cheese, guacamole & sour cream + cilantro! - 1/29/15
