Grilled Veggies

Ingredients
1 yellow pepper 1 orange pepper 1 red pepper1 yellow squash 5 portabella mushrooms 1 eggplant10 asparagus spears 2 peeled sweet potatoes EVOOSalt & Pepper
Directions
Preheat grill to medium heat. Cut the washed veggies into long strips, or rounds, 1/4"-1/2" thick slices that won't fall through the grill.
Brush slices with EVOO, & season with salt & pepper. Working in batches, gril the vegetables until tender & lightly charred all over.
Arrange vegetables on platter & serve hot off the grill. Makes a LOT!!
