Mousse au Chocolat

6 oz of semisweet chocolate3 tbsp black coffee1 tbsp butter1/2 tsp vanilla3 eggswhipped cream
Break the chocolate into pieces and put in a small sauce pan with the coffee. Stir continuously over low heat until melted and thick and creamy. Remove from heat and add the butter and vanilla.
Separate the eggs and drop the yolks one at a time into the chocolate, stirring well after each one. The chocolate should be hot enough so that when the yolks are added they cook slightly.
Beat the whites until they hold a soft peal and fold very carefully into the chocolate. When thoroughly mixed pour the mousse into pots to chill overnight in the fridge.
Top with whipped cream.
