stuffed pepper casserole

Ingredients
3/4 pound 96% lean ground beef1 c. chopped onion2 t. olive oil4 c. chopped sweet peppers1/2 c. chick peas1.5 c. cooked brown rice1 c. canned tomato sauce1/4 c. parmesan cheese
Directions
Cook onion and ground beef in 1t. olive oil, drain. briefly saute peppers in 1 t. oil. Combine together in bowl with chick peas, sauce, and rice. Add in any spices (basil, pepper, parsley, oregano, etc). Pour into Pam-sprayed baking dish and top with about half of the Parmesan. bake at 350 for 20-25 minutes until warmed through. Top each serving with a bit more cheese before serving. Yum!
