Creamy green potato soup

1 onion, chopped3 tbs garlic, chopped5 cups baby spinach1 package of baby vegetables or 1.5 cups of fresh vegetables5 small potatoes or 3 medium sized potatoes, peeled and chopped3 cups chicken broth2 cups skim milk4oz plain greek yogurt 3 tbs salted butterSalt and pepper to taste
Saute garlic and onion in olive oil until translucent.
Add chicken broth, spinach, baby vegetables, butter and yogurt. Stir and let simmer until potatoes and vegetables are soft, or about 30 minutes. It is OK if broth isn't smooth.
Take soup off heat and let cool for 30 minutes.
Either using an immersion blender, a regular blender or a food processor, blend mixture until creamy.
Add salt and pepper to taste.
