Chicken Eggplant Renverse

Ingredients
Directions
Olive oil, 1 eggplant, 2 tomatoes, 1 onion, 1 roasted chicken breast no skin, 2 cups of rice, 4 cups of water.
Cut onion and tomatoes into thick round slices, cut eggplant into half circles or cubes, shred roasted chicken breast into bite size pieces.
In the oven: Drizzle eggplant slices with 1 spoon of olive oil (or spray) and salt and pepper to taste - bake at 450 for 10 minutes.
In the pot: 2 spoons of olive oil, add onion and brown on first side, turn over then add tomatoes on top right away.
