vegetable fried rice

Ingredients
10 cups cold cooked brown rice1 10 oz. package frozen peas10 cloves garlic minced3 large eggs, lightly beaten1/4 cup canola oil1 tsp salt
Directions
1. In a large pan, heat oil on medium-high heat. Add garlic stir and cook until golden then add rice. Stir and cook about 5 minutes.
2. Reduce heat to medium and add frozen peas to rice mixture. Cook 2 minutes.
3. Spread the mixture out to the sides of the pan, leaving space in the middle for the eggs.
4. Add the eggs, and scramble until cooked firm.
5. Mix the eggs with the rice and frozen peas, then sprinkle with salt and stir and cook for another minute.

Makes approx 15 servings of 3/4 cups each
