Cauliflower & Bacon Soup

Ingredients
900g- 1kg of cauliflower (1/2 or whole cauliflower depending on size)1 brown onion chopped 1L Campbell's salt reduced vegetable stock120g bacon chopped
Directions
1. Chop the bacon and onion and place in a pot over medium to high heat.
2. While that's cooking cut up the cauliflower.
3. Once onion is soft add the vegetable stock and cauliflower.
4. Cook over approximately 10-15 minutes until cauliflower is cooked
5. Transfer the mixtures in batches to a food processor and blend until smooth
6. Place the soup back on heat and stir until thoroughly heated through

Serve with a sprinkling of parsely, dollop of cream or your choice of bread.
