Ingredients
1 Can blackeye peas1 Can chickpeas1 Can Mexican style corn 1 Can black beans1 1/2 cups of cherry tomatoes or 2 med regular tomatoes1/2 cup chopped fresh cilantro1/8 t. ground cuminjuice from 2 limes1/2 cup of Fat Free Zesty Italian dressing2 T. dried onion flakessalt & pepper to taste
Directions
Drain and rinse beans and peas. Drain corn. Cut cherry tomatoes in half or dice regular tomatoes. Chop cilantro. Mix all ingredients together and chill for several hours.

    I made mine with some plum tomato and cucumber with more seasonings, and had to sub the blackeye peas wuth cannelini beans. This is so good! I love it and will keep this as a regular item in my diet. Next time I will take the time to soak and cook dry beans for this as I must reduce my sodium intakg - 7/3/10

    I made this as a main course as a filler for lettuce wraps. I added a can of green chilies and some red pepper flakes for some spice. Fat free sour cream and fresh salsa rounded it out nicely. - 6/30/10
