Ramen Cabbage Salad

Ingredients
1 head cabbage (I prefer napa cabbage) shredded-----------------------------------------------------------1 pkg Chicken Ramen noodles--broken up3 Tbsp sesame seeds1/4 cup almonds sliced1 Tbsp margarine-------------------------------------1/3 canola oil (substitute part of the oil with toasted seame oil if you want)2 Tbsp white vinegar + 1 Tbsp rice wine vinegar2 Tbsp sugar1/2 tsp kosher salt1/2 tsp black pepperRamn Chicken falvor packet (left from noodles)10 shakes of low sodium soy sauce
Directions
Toast noodles, almonds, and sesame seeds in margarine until crunchy (do NOT overcook--yuck!) Set aside.

For dressing, combine oil, vinegar, sugar, salt, pepper, chicken packet, whisk thoroughly. It should taste sweet & sour.

Combine cabbage and noodle mixture in a large bowl, top with dressing and toss well. Serve immediately.

Makes 8 servings, about 1 1/2 cups each. (To save calories, I like to skimp on the dressing or serve it on the side.)

*You can prepare everything in advance too, just keep it all separate til ready to serve. (cabbage/noodle mixture/dressing).
