Fantastic Hummus Guacamole Dip

Ingredients:1.5 C (one can) cannellini beans, rinsed and drained1 C fresh spinach1 Tbsp. olive oilHalf a large ripe avocadoJuice from 1 lemon2 cloves garlicSalt & pepper to taste
Toss it all in a food processor and whirl away! Enjoy as a dip with crackers or veggies, or as a spread on sandwiches (it's great with with smoked salmon!).

Tried this using garbanzo beans (I'm not sure what cannellini beans are), adding a half cup of plain yogurt, and using two whole small avocaodes, and thought it was great, such a pretty color. Next time I'm going to add a cup or so of chopped tomatoes, or pico de gallo... maybe today! - 8/5/10

This is really good. My son liked it even better when I added a couple of Jalapeņo peppers to it. I've made it twice.. liked it even more the 2nd time. You would never know there is Spinach in this.It's so easy to make,which is good, I'll make this often! Husband gives 5 stars too! - 8/10/10

My husband does not like hummus (and hates all beans), but loves guacamole. I used a whole avocado and added some Jalapeņo peppers to this recipe and he loved it. I didn't tell him there was beans in it until after he said he liked it; but even after my confession, he still continued snacking on it. - 7/4/11

I added .5 cup milk to make it easier on my blender, and a whole avocado, just because, and it was still a nice texture. We're having it as a cooling side to a spicy dish tonight, but might add spice and/or veg in the future, &mash the avocado and beans before blending. Thank you! - 7/13/10

This is great. I do mean great. What a lot of flavors coming together and then with the veggies to dip in. I haven't figured out the calories but I surely at least 1/6 of the bowl. Love it. Will keep it on hand always. For spreads, etc. Could add with olive oil and make a salad dressing. - 1/23/11
