Black Bean and Corn Salad

Ingredients
2 cans black beans, rinsed and drained2 cans whole kernal corn, rinsed and drained1 medium tomato, chopped1 medium onion, finely chopped1 package pre chopped cole slaw mix (I use Fresh Express)Dressing:1 avocado2 cloves garlic4 tbsp Olive Oil1 tsp salt (or to taste)1 tsp black pepperJuice of one lemon
Directions
In food processor, blend all dressing ingredients until smooth. Set aside.

Mix all other ingredients in large bowl and toss with dressing. Chill for one hour.

This recipe makes 12 one cup servings. I always make 12 cups because it stores well in the fridge for several days and is also a crowd pleaser for parties or get togethers.
