Best EVER Peanut Butter Pancakes

Ingredients
- 3/4 cup whole wheat flour- 1/2 cup white flour (unbleached)- 2 1/2 tsp. baking powder- 1/2 tsp. salt- 1 1/4 cup low fat buttermilk (fat free or lowfat milk works well too)- 3 tablespoons honey or sugar- 1 egg- 1/4 peanut butter- 1 tablespoon peanut oil (or canola)
Directions
Heat a griddle or heavy skillet over medium heat.

In a medium bowl, combine the flour, baking powder and salt. Whisk to combine. In a large bowl, combine the milk, peanut butter, oil and egg. Whisk until smooth. Combine the flour mixture with the milk mixture and gently stir until just combined.

Spray non-stick spray on the heated griddle. For each pancake, pour 1/3 cup batter onto griddle. Cook until golden brown, turn when the edges are slightly dry.

Yields 12 pancakes.
Serving Size = 3 pancakes per person

    Well, I've never had peanut butter pancakes before, so I can't judge if they're the best EVER, but I made these for lunch today and my family loved them! Great recipe! I put a little less sugar in, though, about 2 tablespoons, and it tasted just fine. - 12/5/10

    They were definitely more filling than "regular" pancakes. I also reduced sugar to 2 tablespoons and then topped them with healthified fried apples and some honey. - 2/27/11
