Cottage Cheese Pancake w/out oil

Ingredients
1 1/2 teaspoons flourdash Cinnamondash Vanilla extract 1/4 cup (43 Grams) non-fat cottage cheese (curd style - not whipped cottage cheese) 2 egg whites.
Directions
Combine ingredients in order given. Mix flour, cinnamon, vanilla extract and cottage cheese. Add egg whites and mix fast with fork. Heat small skillet sprayed with PAM and cook for 2 to 3 minutes on each side on low heat.
Serve with Berries and/or bananas if you like or with 1 tsp of maple syrup. YUM !!

Option: If you need to get a little oil in your diet, you can add 1/4 teaspoon of Canola oil into the batter and 1/4 teaspoon in the small frying pan with the PAM.
