One head bokchoy or equal amounts of baby bokchoy, olive oil 1 tbsp, salt to taste, cumin seeds, chilli/pepper powder -1 tsp. garam masala - optional. Dash of sugar -optional. asafoetida 1 pinch, turmeric powder - 1/2 tsp.
Rinse and finely chop bokchoy. Heat oil in pan. Add cumin seed and let it sputter. Add asafoetida and turmeric powder. Add bokchoy and stir well to coat. Add salt, chilli powder and garam masala. Stir well. Cover and cook. for 5 minutes. Add a tablespoon of water, stir and cover. Let cook for another 5-7 mintues. Serve with poli/roti/chapati/paratha.
