Almond-Crusted Chicken Breasts with Jamaican Jerk Seasoning

1/4 c almonds, coarsely chopped1/2 c fine, dry breadcrumbs2 tsp Jamaican jerk seasoning1/4 tsp kosher salt (or sea salt)1 tsp grated lime rind1 1/2 lb skinned, boned chicken breast cutlets1 tbsp olive oil, dividedNote: Jamaican jerk seasoning combines the flavors of thyme, allspice and crushed red pepper.
Makes five 4.8-oz servings.
1. Process 1/4 c chopped almonds and next 4 ingredients in a food processor or blender for 45 seconds, or until finely ground. Place mixture in a shallow bowl.
2. Brush chicken evenly with 1/2 TBSP olive oil. Dredge chicken in almond mixture.
3. In non-stick skillet, heat remaining 1/2 TBSP oil until hot. Cook chicken over medium high for 4 minutes per side or until done.
