Arroz Con Pollo

Ingredients
4 chicken thighs - boneless skinless & Cubed 1 cup diced tomatoes1/2 Red Onion - Chopped4 cloves of Garlic - Smashed/Crushed1 cup Instant Brown Rice (I use uncle bens or Minute rice)1 tbsp Olive Oil1 Packet Sazon Goya (optional and to taste)salt and pepper to taste
Directions
Place a pot/dutch oven/pan (I like to use my le creuset) over high heat. Add olive oi, chicken and onions. Saute until the chicken is light brown. Add the garlic and cook for another 30 seconds. Add rice and water and sazon goya. Then lower heat to low and cover for ten minutes (or per package instructions)

I like to serve with fresh lettuce and tomatoe salad dressed with a little vinegar or lemon juice.
