Ingredients
2 Cups oatmeal1 Cup 1 percent milk1/4 Cup brown sugar1/2 tsp. salt1 1/2 tsp. baking powder2 eggs1/4 cup currantspinch cinnamon2 TBSP Olive Oil
Directions
Prepare 8x8 glass baking dish with cooking spray. Beat eggs with milk. Add oats and stir. Add rest of ingredents and mix well. Bake 350 for 25 min.

    Delicious but much too sweet to my taste. Next time I'll omit the sugar and use dried fruit for sweetening. I added vanilla, nutmeg, ginger and cardamom and it was yummy! - 4/3/11
