Old-Fashioned Breakfast Sausage

Ingredients
1 lb pork tenderloin or very lean ground pork3 Tbsp finely grated onion2 cloves garlic, chopped1 tsp agave nectar1 tsp dried sage3/4 tsp salt1/2 tsp dried thyme1/4 tsp ground black pepper1 Tbsp olive oil
Directions
Remove all visible fat from pork. Cut into 1/2” pieces. Place pork, onion, garlic, agave, sage, salt, thyme, and pepper in bowl of food processor. Pulse just until mixture is well combined and cohesive. Transfer to bowl, cover with plastic, and refrigerate at least 1 hour (or overnight) to allow flavors to marry. There will be about 2 c mixture. Using about 2 Tbsp mixture per sausage, shape into 3”
x 1” links.

Heat oil in large nonstick skillet over medium heat. Add sausages, cover, and cook about 3 minutes. Remove cover, turn sausages, reduce heat to medium-low, recover pan, and cook until sausages are crisp and cooked through, about 2 minutes. You may have to work in 2 batches. Drain on paper towels.
