2 10oz pkgs frozen spinach, thawed1 pint (16 ounces) lowfat(1%) cottage cheese1 cup egg beaters egg substitute or 4 eggs1/4 teaspoon salt (optional)6 tablespoons ground flax seed (meal)1 tablespoon butter1 tablespoon grated parmesan cheese
Heat oven to 375F. Spray a 9-inch pie plate with cooking spray. Squeeze liquid from thawed spinach. In large bowl, combine egg beaters, cottage cheese, salt, 5 tblsp flax seed meal, and spinach. Pour mixture into pie plate. Dot with butter and sprinkle with reserved flax seed meal and parmesan cheese. Bake 45 minutes. Cut into wedges and serve.
