Dirty Rice and Egg

Ingredients
½ cup brown rice (easiest to use left over rice)1 TB oil olive for cooking2 TB grated carrots2TB grated zucchini2TB grated summer squash¼ cup chopped arugula1 TB Braggs Amino Acids1 eggFew raisins
Directions
Lightly coat the bottom on a frying pan with olive oil. Add in the rice, carrot, zucchini, and summer squash. Cook lightly until zucchini and summer squash begin to turn transparent. Add in the arugula sauté a few more minutes, then add in Braggs Amino Acids. Once all ingredients so far are adequately mixed together, push rice mixture to the sides of the pan to make room for the egg. Crack the egg into the middle of the pan and cook to liking. To plate up, first scoop rice onto plate, top with the egg, then sprinkle a few raisins. Enjoy.
