Easy Healthy Pea Soup

1 15 oz. can Del Monte salt free sweet peas1 1/2 cup almond breese Milk, divided2 tsp all-purpose flour2 tbsp extra virgin olive oil1/4 tsp salt (optional)1/2 tsp nutmeg1 medium onion, chopped
Combine, undrained peas, olive oil, HALF the almond milk, flour, salt, nutmeg in blender. Blend on high for 3 minutes or until smooth.
Pour into medium sauce pan and heat on very low.
Put onion and remaining almond milk in blender without cleaning out blender. Blend on high until onion minced.
Stir into sauce pan. Heat, stirring ocassionally for about 30 minutes or longer until warm and ready to serve.
Season to taste.
Makes 4 1-cup servings.
