Poppy Seed Chicken Casserole

Ingredients
2 cups sour cream1 can (10 ¾ oz) condensed cream of chicken soup, undiluted2 teaspoons poppy seeds2 ½ cups cubed cooked chicken1 ¾ cups butter-flavored cracker crumbs (about 36 crackers)½ cup butter or margarine, melted1 1/2 cup minute rice
Directions
On the stovetop cook the minute rice according to box instructions. In a bowl, combine the sour cream, soup and poppy seeds. Stir in chicken. Pour rice into a greased 11X7X2 inch baking dish, and top with the chicken mixture. Combine the cracker crumbs and butter; sprinkle over top. Bake, uncovered at 350 degrees for 25-30 minutes, or until heated through.
