Non-stick cooking spray1 C. uncooked long grain brown rice1/2 tsp. salt2 1/2 C. hot water1 can cream of chicken soup (98% fat free)1/2 C. fat free sour cream2 cans albacore tuna (packed in water), drained1 16 oz. pkg. green peas1 C. cheddar & monterey jack cheese
Combine uncooked rice, salt and hot water in 2-quart microwaveable casserole dish that has been sprayed with non-stick cooking spray. Microwave on high for 35 minutes. Cook green peas according to package directions and drain.
Stir soup, sour cream, tuna, and green peas into cooked rice. Mix well. Top with cheddar cheese. Heat in microwave until bubbly in the middle, approximately 5 minutes. Makes 7 1-cup servings.
