Carbquik Banana Nut Muffins

Ingredients
-2 cups Carbquik-1/8 cup water, or as needed-2/3 cup coconut milk-So Delicious Sugar Free Vanilla-1/3 cup Splenda-1 tsp baking powder-1 tbs olive oil-1 egg, beaten-1 very ripe banana, mashed-1/2 cup walnuts or pecans
Directions
-Preheat oven to 400 degrees. Place paper baking cup in each of 12 regular-size muffin cups.

-Stir all ingredients together just until moistened. Adjust batter with water as needed.

-Bake 13 to 18 minutes or until golden brown.

    I had a couple black bananas but I didn't have all the ingredients so I had to change it a bit. I do not like soy-milk so I don't keep it in the house. Instead, I thinned 1/3 cup of coconut milk with 1/3 cup of warm water. I LOVE this recipe! :) Thank you! - 4/28/14
