Coconut Flour Brownies (Gluten Free) (mi-my23)

1/3 cup butter, melted½ cup cocoa powder6 eggs1 cup sugar½ teaspoon salt½ teaspoon vanilla½ cup Coconut Flour
"In a saucepan at low heat, blend together butter and cocoa powder. Remove from heat and let cool. In a bowl, mix together eggs, sugar, salt and vanilla. Stir in cocoa mixture. Whisk coconut flour into batter until there are no lumps. Fold in nuts. Pour batter into a greased 11x7x2 or 8x8x2 inch pan. Bake at 175C (350F) for 30-35 minutes. "
(Above is a cut and paste from the website, but I just melted the butter in the microave a few minutes, mixed in the cocoa powder, then let it cool. I added everything else but the coconut flour in another bowl and mixed well with a spoon. Then I poured that into the cocoa-butter mix and mixed with an electric mixer for a few minutes on low. I then added the coconut flour (Bob's Red Mill, not the web site's kind) and mix with the electric mixer, for what felt like FOREVER until that mix was lump free and blended. If feels like it's never gonna happen, but it does. Trust me. Then I poured it into a baking pan and baked as it says. The brownies are wonderful. I hear they are low-carb, full of fiber, and super good for you! So I ate 3/16 already, lol.
