Ingredients
6 Tbsp. parsley chopped2 cloves garlic, minced6-8 Tbsp. lemon juice(fresh squeezed is best)2 tomatoes seeded and chopped1 cucumber peeled, seeded and chopped1 medium red pepper seeded and chopped1/2 c. feta cheese (use reduced fat for less calories)8 ounces chicken breast
Directions
Put garlic and parsley in a mixing bowl and combine. Wisk in lemon juice. Add all vegetables. Add 6 Tbsp. of the feta cheese and toss. If using chicken bake in a 375 degree oven for 45 minutes make sure to check for doneness. Put chicken on top then sprinkle the remaining feta cheese on top.
