Zucchini, Sun-Dried Tomato, Olive & Feta Quiche

Ingredients
Pie Crust:1 c. flour.4 cup shortening1/2 tsp. salt2-3 Tbsp cold waterFilling:1.5 c. sliced zucchinisun dried tomatoes1 oz of sliced kalamata olives (pitted)1/4 c. shredded mozarella1/4 c. shredded cheddar1/2 c. feta4 large eggs
Directions
Make pie crust by combining the pie ingredients and rolling into tin.
Add filling ingredients and put on half of cheese and then pour on 4 beaten eggs. Then, add rest of cheese on top. Bake at 375 degrees for 30-45 minutes (until filling is set up). Makes 4 large portions or 6 smaller portions.
