Ginger Groove Fruit and Granola Muffins

1 cup flour1 cup whole wheat flour3/4 cup graham cracker crumbs1 tbsp baking powder1 tsp ground ginger1/2 tsp salt4 1/2 tbsp (60g) apple cider drink mix1/4 cup dark brown sugar3 tbsp canola oil1 tbsp vanilla extract1 tbsp grated fresh ginger2 cups fat-free soy milk1 large apple, peeled and chopped2/3 cup (100g) cherries, pitted and chopped roughly1/3 cup (40g) chopped walnuts1 2/3 cup (200g) chunky granola
Preheat oven to 375F grease or line muffin cups.
In a medium bowl, whisk together flours, crumbs, baking powder, ground ginger, salt and cider mix. Set aside.
In a large bowl, beat together brown sugar, oil, vanilla, ginger and soy milk.
Add dry ingredients and mix until just blended, then add apple, cherries, walnuts and granola and fold in.
Bake 26-28 minutes. Cool in tin 5 minutes, then unmould onto a wire rack and cool completely.
