Comfort Food Chicken Noodle Casserole

1/4 cup chopped onion2 Tbsp Food Club Extra Virgin Olive Oil1.5 pounds of Tyson boneless/skinless frozen chicken breast1 can Campbells Healthy Request Cream of Chicken Soup10 oz 2% milk1/4 cup Food Club Great Egg-Spectations Real Egg Product3 cups Food Club Extra Wide Egg Noodles6 cups water (for boiling noodles)1 14.5 oz can Food Club Whole Green Beans1 pound Food Club Frozen Cut Broccoli0.5 Tbsp Kroger Zesty Blend Garlic and Herb Seasoning1 cup Total Cereal (crushed)6 Tbsp Kroger Crispy Fried Onions2 Tsp unsalted butterButter Flavor Cooking Spray
Serves 8
Preheat oven to 375 degrees. Spray 13 X 9 baking pan with butter flavor cooking spray.
Cut partially thawed chicken breasts into bite size pieces. In a large skillet, preferably cast iron, saute onion in olive oil until just translucent. Remove onion from pan and set aside.
Add chicken pieces to remaining olive oil in skillet and brown evenly.
In a large pot, heat 6 cups of water to boiling. Add egg noodles and boil for approximately 5 minutes or until noodles are al dente (do not over cook or the noodles will become to mushy in the casserole). Remove and set aside,
Boil or steam broccoli until just tender. (Do not overcook)
In a large bowl, combine Egg noodles, cooked chicken, onion, Cream of Chicken soup, milk, Great Egg-Spectations Real Egg Product, Garlic & Herb seasoning, green beans and broccoli until thorougly mixed.
Pour mixture into baking pan. Cover with aluminum foil and bake for 30 minutes.
In the meantime, in a medium bowl, combine melted butter, crushed Total Cereal and Crispy Fried Onions until evenly mixed.
Remove casserole from oven and remove aluminum foil. Evenly spread the cereal mixture on top of casserole and bake (uncovered) for an additional 10 - 15 minutes or until crispy. Be sure to check every 5 - 10 minutes to prevent burning.
Cut casserole into 8 equal pieces. Enjoy!
