Whole Grain Waffles

1 3/4 Cup Flour (Whole Wheat or a mix of Whole Wheat and another whole grain flour such as Flaxseed)2 tsp Baking Powder1/2 tsp Salt1 T Honey or Brown Sugar3 Eggs1 Cup Skim Milk3/4 Cup of Plain Greek Yogurt1/2 Cup Vegetable Oil1 tsp Vanilla Extract
Set waffle maker on High. Spray both sides of waffle iron with non-stick cooking spray.
Mix dry ingredients in a large bowl. Set aside.
Mix wet ingredients in another bowl and then add to dry ingredients. Stir until just mixed - do not overstir. Can add a little more milk until batter is at desired consistancy.
Ladle about a half a cup of batter onto waffle iron. Cook for about 3 - 4 minutes.
Makes 7 (6.5") waffles.
