Lentils, Amaranth and Tomatoes

Ingredients
1 lb dried lentils1.5 cups dried amaranth8.5 cups water1 (16 oz) diced tomatoes3 tbsp dried cumin3 tbsp chili powder
Directions
Place lentils, amaranth, and water in a big soup pot. Add cumin and chili powder. Heat to boil and lower to medium-high. Cook for 20 more minutes. Add diced tomatoes, stir and let sit on stove for 5 minutes.
Makes 11 one cup servings.
