- Minutes to Prepare:
- Number of Servings: 6
Ingredients
Directions
-1.5 cups sliced radishes- 1/2 small onion, sliced thin- 1 tbsp red wine vinegar- .5 cup white vinegar- 7-10 whole peppercorns- bay leaf- 1 tsp salt- 1 tsp sugar
Combine vinegars, pepper, bay leaf, salt and sugar in a non-reactive microwave-safe bowl or measuring cup. Microwave 1 minute, until warm enough that salt and sugar easily dissolve.
Place radishes and onions in non-reactive bowl, jar, or lidded pyrex. Pour liquid over; let sit in refrigerator at least 4 hours. Will keep for about 5 days.
There may be a strange odor when you open the pickles. Don't be alarmed! It is simply a chemical reaction between the radishes and the vinegar, and they will taste like normal (radish-y) pickles.
