Dry-Fried Tofu with Bok Choy

5 baby bok choy1 block firm tofu (I use Azumaya brand)For the marinade:-1/2 c. soy sauce-1/4 c. rice wine-Grated ginger to taste-1 clove garlic, minced-1 tsp brown sugar
Drain tofu well and cut into thin-ish triangles (cut block in half depth-wise, then into triangles)
In a hot non-stick pan with NO OIL, place tofu. Press with spatula and cook until well-browned and dry.
Mix together all marinade ingredients, and add tofu. Let sit for 30 minutes.
Meanwhile, cut up the bok choy. Remove tofu from marinade, and place in a hot pan. Add bok choy. Stir fry (with no oil) until vegetables are done and tofu is hot. Add water if pan gets too hot.
