Ingredients
Sauce3 tbs Soy Sauce2 Tbs Mirin or Sherry2 Tsp CornstarchNoodles8oz box enriched Lo Mein noodles or thin spaghetti2 Tbs Olive Oil1 Cup sliced mushrooms1/2 cup Scallions3 cloves of garlic1 Cup thinly sliced Carrots1 Cup thinly sliced Celery2 Cup Shredded bok Choy cut up some of the stem thinly too(I like to throw some corn in there when its in season as well) Also things like water chesnutts or even some tofu work well.

In a seperate bowl mix the sauce

Cook Noodles as per box instruction

Heat your oil on med hi then toss all your veggies in the wok/fryingpan for 4-6 minutes mix in the cooked pasta then the sauce stir everything up and enjoy.

    I'm making this for the second time. It's a great recipe! I used merlot because I didn't have sherry on hand, and I am going to double the sauce this time because it was a little on the dry side the first time I made it. - 1/11/11
