Cosmic Curl Girl's Carrot Cake - a variation

Ingredients
Dry Ingredients3 1/4c Spelt Flour2c Sucanat2c Carrots, shredded or grated3/4c Raisins (*)3/4c Dried Organic Cranberries (*)1 Tbl Baking Soda3/4 tsp Cinnamon powder1/4 tsp Sea salt, or to taste 1/4 tsp nutmeg (*)Wet Ingredients:1 3/4c Carrot Juice, Fresh1/2c Filtered water1/3c ginger juice, fresh3/8c Safflower oil2 tbl Apple cider vinegar, raw1 tsp vanilla extract, alcohol free(*) Actual recipe calls for 1 1/2c raisins1/4 tsp Allspice powder
Directions
Prep Time is 45 min, cooking time60 min, it fills an 11" spring form pan, and gets 16 even slices

1. Preheat Oven to 350. Place all dry ingredients, except carrots, raisins & cranberries, in a large mixing bowl, whisk well.
2. Place wet ingredients in a small bowl, and whisk well. Add wet to dry, along with carrots, raisins & cranberries, mix well.
3. Pour into a well oiled 11" spring form pan. Bake for 60 minutes or until a toothpick comes out dry.

Serving Suggestions:
Ice with Cashew Creme Frosting, topped with chopped walnuts &/or grated carrots.
