Barbs Chicken Salad

Ingredients
Boneless/Skinless Chicken Breasts, 4 oz *celery stalk, 2 *Onion, Medium ChoppedParsley, dried, 2 tbsp Chicken Broth, 2 cup (8 fl oz) or enough to coverHellmann's Mayonaise, 1cupHard Boiled Egg, 3 large chopped*Pickle Relish - Kroger Sugar Free Sweet about 1/4 cup or to tasteSalt, 1 dash Celery seed, 1 tsp or to taste
Directions
Place chicken in a saucepan along with the celery, onion, and parsley.
Add the chicken broth enough to cover.
Cover and cook on medium flame until chicken is done. About 15-20 min.
Remove Chicken and vegetables to a plate and let cool completely.
After it is all cooled, then place it all into a food processor or food chopper and chop lightly.
After chopping add to a bowl and add the chopped eggs, pickle relish, salt, celery seed and mayo and mix it altogether and then Chill.

Serve over lettuce or on sandwich buns.
Makes 10 1/4 cups
