Red Wine Risotto with Swiss

Ingredients

1 Tbs Olive Oil1/2 cup Onion, diced1 Cup Rice1 Cup Chicken Stock1 Cup Water1/2 Cup Red Wine1/4 Cup Swiss Cheese, shredded
Heat Olive oil in medium saucepan over medium heat
Saute chopped onion for 4 minutes (until clear)
Add rice and saute for another 2 minutes
Slowly add chicken stock 1/2 cup at a time until absorbed by the rice, stirring slowly.
Once all the stock is in, add water 1/2 cup at a time, still stirring until absorbed.
After the water is added, add red wine, again, stirring until all is absorbed.
Just before serving, stir in shredded swiss cheese. Add salt and pepper to taste.
Makes 4 Side servings or 2 Main Dish Servings (Double the nutritional info if eating as a main dish)
