Garlic roasted beets

Ingredients
6 beets, trimmed scrubbed, and halved4 garlic cloves, unpeeled3 tsp olive oil1/4 tsp salt1/4 tsp ground black pepper
Directions
Place beets and garlic in a small roasting pan. Pour 1 tsp olive oil ove the veggies and stir to coat. cover the pan with aluminum foil and bake until beets are tender about 45 minutes.

Let stand to cool about 5-10 minutes. Peel and cut into bite size pieces.

Peel the garlic. Chop it and mix with beets. Add the remaining 2 tsp olive oil, 1 Tbsp chives (if desired) salt and pepper. Stir and serve.

    I didn't like this recipe as it. I think if I make it again I'd peel the beets, the peels added an unappetizing taste and texture. Beet lovers might like them, but someone like me who is new to beets might want to peel them after they are cooked. - 7/18/12
