Couscous Salad

Ingredients
Salt, 1 tsp (remove)Avocados, California (Haas), 1 fruit without skin and seeds (remove)Lime Juice, 1 lime yields (remove)israeli (or pearl) couscous, 1/3 cup cooked, 3 serving (remove)Beans, black, 2 cup (remove)Scallions, raw, 5 medium (4-1/8" long) (remove)Yellow Sweet Corn, Canned, 1 can (12 oz) yields (remove)Mushrooms, fresh, 1 cup, pieces or slices (remove)Olive Oil, 2 1tsp (remove)Jalapeno Peppers, 1 pepper (remove)
Directions
Boil couscous in 1.5 cups water, cover and simmer 15 mins
chop scallions, seperating white and light green parts from dark green
rinse black beans
thinly slice jalapeno
thickly slice mushrooms
slice avocado

saute mushrooms and light parts of scallions in 2tsp olive oil unti mushrooms soften. Add jalapeno and corn. Saute until warmed through. Add dark green scallions and beans. Add salt. When done, add couscous. Serve with avocado.
