Couscous with sauteed vegetables (carrot/pepper/onion)

Ingredients

coucouschicken stock or brothbutterolive oilgarlic, 2 cloves dicedonion. .25 red or white, dicedpepper red/green/yellow = your choice, 1 whole and dicedcarrots = baby or whole = your choice, diced
1 C liquid made up of .25 cup of stock (homemade) or broth and the rest water.
Bring to a boil
Add couscous, cover and remove from heat
Once set-up put into large bowl and add butter, salt and pepper and mix. Set aside
to saute pan add 1 Tbsp olive oil. Once hot add diced onion and garlic
Once translucent and bell pepper and carrots
saute until tender.
Add to the couscous mixture and mix.
Serves six 1/2 cup servings
